Beginning as a predoctoral fellow at the CSIC in Granada and later a postdoctoral researcher at ENEA in Rome, Dr. Fonollá has held multiple research and leadership roles in clinical analysis and product innovation. He directed a clinical laboratory, managed the quality control for dairy products at Puleva S.A., and later became the head of Human Nutrition and Clinical Trials at Biosearch Life and DOMCA S.A.U. He also served as Technical Director at Clinique Vie S.L., guiding regulatory and quality operations. Currently, he mentors graduate students and leads thesis work in precision nutrition and epidemiology.
Research Interests
Dr. Fonollá’s research is focused on the clinical evaluation of functional foods, gut microbiota modulation, immune response, and metabolic health, especially in vulnerable populations such as infants and the elderly.
